Quills founders, Nathan and Gabriel, have followed coffee around the world to savor its many expressions: lattes in Seattle, espresso in Greenwich Village, press pots on the Serengeti. Here in Louisville, they've created Quills' signature line with local roasters Sunergos and Safai, who ensure that our coffees are fairly traded and roasted to individual perfection. From our deep, dark Espresso to sunny Kenya AA, each of Quills' whole-bean blends and single-origins represent the best of what we love in coffee.
M (Medium Roasted)
Guatemala Antigua Los Volcanes
Coffee from the volcanic Antigua region of southern Guatemala is known for its pleasant acidity and floral notes. Our Guatemala Antigua is sure to please both light- and dark-roast lovers with its nutty creaminess and cocoa finish.
Kenya AA Karatina Estate
An indication of bean size, AA represents the largest size of coffee bean grown in Kenya. Unlike most Kenya coffees sold in the United States, our Kenya AA comes from a single farm, ensuring ethically- and sustainably-grown beans. This roast features a balanced acidity, redolent of berries and citrus fruits with a dry, wine-like finish.
Costa Rica Tarrazu Fruta de Ora
“Fruit of Gold” seems an appropriate name for this highest-grade bean from the Tarrazu region of central Costa Rica. These coffees are known for being balanced, full-bodied and clean. Additionally, our Costa Rica Tarrazu features a deep, pungent and slightly smoky flavor.
Quills Blend
Our namesake and signature house coffee is a melange of Central and South American beans, hand-blended before roasting. The result is a pleasant, drinkable brew, loaded with the flavors of cocoa and nuts. The finish is clean with a light, natural sweetness.
Tanzania Peaberry
“Peaberry” refers to the unique single-bean shape produced by coffee plants on Mt. Kilimanjaro in Tanzania. Peaberries are distinguished by a greater brightness and complexity of aroma. Our Tanzania Peaberry is smooth and nutty with a zesty, lemony sparkle and a dry, wine-like finish.
Columbia Popayan Supremo
Classified “supremo”, the highest grade of Columbian beans, this coffee is a South-American classic. Our Columbia Supremo stands out with its deep smokiness and hints of molasses and tobacco while retaining all the smoothness that makes it a long-standing favorite.
D (Dark Roasted)
Ethiopia Harrar
Because coffee beans from the Harrar region of Ethiopia are dried with the coffee-cherry intact, the resulting brew carries distinct berry flavors and a wild, complex sweetness. Our Ethiopia Harrar has notes of bittersweet chocolate with a finish of subtle blueberry.
Big Valley Blend
A post-roast blend of African and South American coffees, our Big Valley unites the best of both growing regions. Savored slowly, each cup layers of bittersweet cocoa and grapefruit flavors followed by a lingering smokiness.
“Big Valley” was named in honor of a friend who lived life with passion adventure. He was lost at sea while pursuing a dream.
Rain Forest Blend
A shade-grown coffee, this blend of Central and South American beans is cultivated beneath the sheltering canopy of shade trees. Simple and straightforward, Quills' Rain Forest Blend, has a soft, sweet aroma, light body and deep, cocoa finish.
Espresso Especial Blend
Quills' exclusive blend of dark-roasted coffees may be enjoyed alone or at the heart of a hand-crafted beverage from the bar. As a single- or double-shot, Espresso Especial has a thick, velvety mouthfeel, similar to a creamy drinking-chocolate. Accompanying its rich texture is a dense, natural sweetness and the flavors of caramelized plantain, vanilla and pistachio. Each sip is a singular experience.
Sumatra Mandheling
This selection comes from the Mandheling region on the island of Sumatra in Indonesia where coffee is grown and processed by hand in very small (sometimes backyard) farms. The result is a complex and flavorful cup. Our Sumatra Mandheling is earthy and herbal, piqued with a peppery finish.
